Tired of New Year's feasts and plentiful feasts, I want to eat light meals. I arrange for myself fasting days from fruits and vegetables. I eat light salads, such as a salad of beets and pumpkin seeds.

And one of my favorite fruits is avocado. Although this fruit is considered a fruit in biology, it is used mainly in salads and snacks.

This is a hearty and nutritious product that goes well in salads, especially with seafood. And for vegetarians and raw foodists, this tasty plant replaces meat, eggs.

It is good that all winter you can buy this fruit on store shelves. In Russia, it does not grow and it is taken to us from South America and Israel.

The amazing plant is similar in color to a dark green, wrinkled pear. Inside it is a relatively large bone, which takes up a lot of space. But still the pulp is bigger. To taste, the fruit resembles butter with nuts.

When choosing an avocado in a store, pay attention to its fruits - mature or not. If the fruits are hard to the touch, then these can be bought and allowed to ripen at home at room temperature for several days. If the fruit is already soft - such fruits can be used immediately in a dish. But always try to buy an avocado with a dark green skin, without dark spots. These fruits are spoiled or overripe.

How to clean avocados? There are many such methods. I liked one - I peel the fruits like a carrot. That is, I remove the skin with a vegetable peeler and then cut it in a circle with a knife, so that then the fruit is divided into two halves and a bone is pulled out. Healthy salad with avocado and green beans

This salad is prepared very simply. Just a few ingredients that you can always buy in the nearest store, and a delicious original dish on your table. Avocado goes well with green vegetables and eggs, and Mozzarella cheese gives the dish completeness. Quail eggs are used in the recipe: with them, the salad is more beautiful. But ordinary chicken are also suitable, which can be cut not in standard cubes, but in slices, dividing the egg into 4-8 parts.

Stages of cooking.

1. Boil green beans in slightly salted water. It will take about 10 minutes to cook. Throw in a colander and rinse with ice water. Cut green beans into small cubes.

2. Remove the husk from the onion, cut into two pieces and cut the half into small cubes.

3. Boil quail eggs (about 3 minutes). Set them to cool. Rinse the avocado, dry it with a paper towel and, after cutting, carefully open and remove the stone. Cut the peel and chop into small pieces.

4. Peel the eggs and cut them in half. Cut the Mozzarella cheese into small slices or cubes. Wash greens, dry and finely chop.

  • Avocado - 2 large fruits,

Shrimp, if small, can be cut. They will look organic anyway. But large ones will have to be cut.

In the second recipe, I already fried the shrimp. For this I took large king prawns. The dish came out delicious and delicious.

Avocado peeled, cut into cubes. Lay on top of the leaves on a plate.

Cut the cherry into halves and decorate on the sides of the plate. Put fried shrimp in the center.

For many, red caviar is associated with the New Year holidays, but this salad will be a great solution on any holiday table. The salad is seasoned with mayonnaise, so it's difficult to call it diet. But it is so tasty that everyone will like it.


  • slightly salted red fish - 300 gr.,
  • crab sticks - 200 gr.,
  • semi-hard cheese - 70 gr.,
  • red caviar - 70 gr.,
  • avocado - 1.5 pcs.,
  • quail eggs - 2 pcs.,
  • canned sweet corn - 1 can,
  • dressing mayonnaise.

The easiest avocado and tuna salad recipe

This option can be prepared in just a few minutes. And the result will be such that the resulting dish is not ashamed to even be served in a restaurant.

We will need: (for 2 servings)

  • avocado - 1 pc.
  • canned tuna - 1 can
  • onion - 0.5 pcs
  • parsley, dill - 0.5 bunch
  • lemon - 1/4 part

1. The first thing we need to do is pickle the onions. To make the dish look the most spectacular, take a red onion. Moreover, it is not as bitter as usual, and one might even say slightly sweet. Therefore, for our dish today it will be what we need. Although of course ordinary onions can also be used.

Onions must be cut into short “feathers”. To do this, cut the half of the onion into two more halves and cut it not so that it turns into half rings, but like this (see photo). At the same time, the thinner you cut it, the less it will be felt in the salad. I managed to cut it into a thickness of 1 mm, but this required a very sharp knife.

2. Transfer the “feathers” of the onion into a deep cup and squeeze the juice from the lemon onto them. Stir and leave to marinate. It does not take much time. It will be enough 10 minutes. And during this time we will prepare all the other ingredients.

3. Cut the avocado into two halves and carefully remove the stone. If flakes remained in the place where it was located, then remove them.

4. Peel the skin. If it is dried, then it can be cleaned simply by picking up with a knife. If the skin is fresh, then it needs to be cleaned simply by cutting very thinly.

Cut off the skin with a very thin layer. Under it is a large number of useful vitamins and minerals.

5. Now we need to remove the pulp, and we will need to leave the “boat” of the fruit. In it we will serve the finished dish.

To do this, and the form turned out neat, it is necessary to outline the edge with a sharp knife. I leave it about 5 mm thick. I make a small incision throughout the fruit, and then remove the pulp with a teaspoon.

These "boats" should be the result.

6. Dice the pulp. Put them in a bowl. Add the pickled onions there. If he poured a lot of juice, then you can slightly squeeze it. I didn’t get a lot of juice, so I spread the onion as it is.

In addition, it seemed to me completely unnecessary to pour lemon juice. It will give an additional taste and aroma to our dish.

7. Grind the greens. You can use only parsley, but I also took dill. I like its smell, combined with the aroma of our exotic fruit.

Add greens to a bowl and mix.

8. Drain the oil and excess fluid from the tuna. It is good to use tuna for salads. It is already crushed to the desired state, besides it is well saturated with oil and its own juice. This means that the filling will not work dry.

Stir the resulting mass.

9. Fill out the molds, laying out the contents as densely and fully as possible. Let there be such a good little pea. The top does not need to be compressed, it will create additional volume.

That's basically all, it turned out very beautifully.

For decoration, I decided to use persimmon. She will add bright paint to our dish. In addition, it combines quite well with taste with all the ingredients.

I must say that I still have a little salad. About one mold. It can be placed in tartlets (there will be two of them), and it will also be very beautiful.

1. Boil chicken fillet in salted water. For taste and aroma, peas and bay leaves can be added to the broth. Then remove from the broth, cool and cut into small cubes.

2. Shrimp also boil in salted water for 2 to 3 minutes. Then drain the water, let it cool slightly and clean them of the shell.

3. Cut the avocado into two halves and remove the stone.

Carefully cut the edge with a knife so that the edge remains approximately 0.4 cm thick. Then remove all the flesh with a spoon. You should get two neat “boats” that will become a form for the contents.

  • Avocado - 1 medium fruit,
  • Red onion - 1 head,
  • Red fish - 400 gr.,

  • cherry tomatoes - 8 - 9 pcs.
  • arugula - 100 gr

Remove the garlic. He has already given all his aroma, and will no longer be useful to us.

4. Cut the avocado into two halves, remove the stone and peel the skin. Then cut into small cubes.

5. Cheese for the dish is better to take hard. Parmesan is very good for him. It must be grated. Such cheese does not stick together and nicely decorates any dish.

6. Cut the onion into two more halves and cut it into quarters of rings. Try to cut as thin as possible so that he does not stand out in a dish with his own taste.

7. Cut the cherry tomatoes into two halves.

8. Prepare the dressing. To do this, pour balsamic vinegar into a bowl, add olive oil and mix. Add Dijon mustard and mix again. Optionally, add salt and a pinch of black pepper.

9. Now you can collect all the prepared ingredients in one piece. Put the arugula on a flat plate. If you didn’t have it, then you can use any other green salad, including Beijing cabbage.

10. Put halves of tomatoes on it.

11. Then onions and shrimp.

12. And we still have avocados and cheese. First, spread our chopped fruit, and then sprinkle everything with cheese.

13. Stir the dressing again and pour over all the contents.

Now the dish can be served at the table and treat guests. As you can see, it turned out to be bright and beautiful. Therefore, it certainly will not go unnoticed. And when they try it, they will certainly reach for the supplement.

For this reason, salt is not added to many mayonnaise salads.

6. Chop the garlic. You can use the press for this. Or you can just finely chop it with a knife.

To make it evenly disperse in all the ingredients, you can mix it with a small amount of mayonnaise. Then add the resulting mass to a mixture of vegetables and chicken.

7. Add chicken meat.

8. Stir the contents, then add a little more mayonnaise, if necessary.

9. You can serve the finished dish just on a dish, or in a salad bowl. And you can put it in the culinary ring. First put out pretty tight, almost tamping. And then put it loose, creating extra volume.

Garnish with greens. Remove the ring. And this is what beauty turned out to be.

Then remove and put on a layer of paper towels. When the oil drains, string them on a skewer.

2. Fry the cherry tomatoes cut into two halves in the same oil, or on the other. When you get it, they need a little salt.

3. Cut the avocado into two halves, remove the stone and peel. Then cut into slices.

4. Put lettuce leaves on a flat plate. Then skewer with shrimp, slices of fruit and spread the halves of tomatoes.

5. Cook the pink sauce. To do this, squeeze the juice from the lemon, add yogurt and ketchup. First add half a teaspoon of ketchup. The sauce should turn pink. If it seems that you want to add some more color, you can add it additionally.

Also add salt and pepper. If desired, the sauce can be diluted with a small amount of cold boiled water to make it thinner.

It is not advisable to dilute it with oil, since we already fried the components in oil. And the dish can turn out to be too fat.

6. Season the contents of the plate with sauce and serve.

This dish can be considered a light snack. It is prepared in a matter of minutes, looks great on the table and is very satisfying and nutritious. The composition of the products is as simple as the appetizer itself.

Cream can be prepared from any soft cheese.

  • avocado - 0.5 pcs
  • tomatoes - 2 pcs
  • shrimp - 16 pcs.
  • curd or cream cheese - 80 - 100 gr
  • garlic - 1 clove
  • lemon juice - 1 tsp
  • salt to taste

From this amount we get 8 "boats". If you want to do more, you can increase the number of ingredients.

1. Boil water in a pan, salt and boil the shrimp. Cooking time should be no more than 3 minutes after boiling. Then throw them in a colander, let it drain and cool slightly. Then clean them.

2. Cut the avocado into two halves and remove the stone.

Then peel the skin and cut the fruit into cubes. Transfer to a deep bowl in which it will be convenient to whisk it.

3. There, add chopped clove of garlic.

4. Prepare a cream - mousse. To do this, add cottage cheese or cream cheese to the prepared ingredients in a bowl.

Add lemon juice and grind into a homogeneous mass with a blender.

Such a cream - mousse can be prepared for breakfast. It is very tasty for them to spread sandwiches with brown bread.

5. Tomatoes cut into 4 parts. Remove the core with seeds and partitions.

6. Fill the “boat” with cream and garnish with two shrimps. I had more of them, so I decorated with three.

Sprinkle with herbs and serve immediately.

Simple and tasty bacon salad with vinaigrette sauce

As we have said more than once today, avocados go well with a wide variety of products. I have a very simple and tasty option in my piggy bank for recipes on how to cook this product with bacon. It would seem that there may be delicious ?!

  • avocado - 1 pc.
  • bacon - 70 gr

  • lemon juice - 1 tbsp. a spoon

1. Fry the bacon in a dry frying pan, or in a small amount of oil until crisp. Put on a paper towel to absorb excess oil.

Avocado is fatty in itself, so excess oil will be completely useless.

2. After cooling, cut the bacon into small pieces.

3. In the meantime, it cools, peel our fruit. To do this, cut it into two halves and remove the stone. Then gently peel the skin.

4. Cut it into long slices. Cut each half into three parts. They can be the same or different in size.

5. Prepare the vinaigrette sauce. To do this, mix lemon juice with water, honey and oil. Add salt and pepper. Beat the mixture with a whisk.

6. Grind half the white part of the leek. And you can cut the whole, if you love him.

7. Put avocado slices on a plate. If there are two portions, then spread them equally into each of them. Pour over the sauce. Sprinkle with bacon and chopped parsley.

So simple, fast and tasty, we prepared a dish with a beautiful serving.
